Co-owner and chef, Paul Eastman is a native of Waltham, Massachustts and a graduate of Johnson and Wales University with a degree in culinary arts and managment. From a very young age, Paul has had a passion for cooking and through the years he has worked in a variety of kitchens learning not only to be a very skilled chef, but also deepening his love for the trade.

Co-owner and baker, Christina Johnson, originally from Seattle, Washington, is a graduate of South Seattle Community College with a degree in culinary arts and a specialzation in baking. Like Paul, she has spent the majority of her working career in the restaurant field as a chef and baker.

Paul and Christina have traveled the world over. The have met many people and experienced a wide variety of foods and flavors which they incorporate into their menu. While working together in Hawaii, the dream of opening their own restaurant was born. That dream was realized in Amesbury, Massachusetts in November 2007. The name Phat Cats originates from Christina's childhood and lends itself well to the laid-back atmosphere where there is always jazz music playing in the backgroud.

Diners can enjoy a menu that includes many locally grown and all natual products. Everything from the bread and desserts to the gnocchi and ravioli is homemade in-house. Most of Phat Cats' daily specials include a wide variety of domestic seafood, but the dish that keeps diners coming back is the famous slow braised beef short ribs. Phat Cats' new bamboo crafted bar boasts a delicious selection of signature martinis that are named after Amesbury's historic sites.
